1Most first-time liquor store owners plan the layout and then buy shelving to fill it. That order is backwards, and it is why we get calls about sagging shelves in year two. Do the arithmetic before you buy: a full 750ml wine bottle weighs roughly 2.5 to 3 pounds, and a 4-foot shelf packed with wine holds somewhere around 45 to 65 of them — call it 120 to 190 pounds sitting on one shelf, on every shelf, all day. Light-duty display shelving is not built for that, and the failure is gradual enough that you notice the bow long before anything falls. Beyond the weight, liquor is one of the most layout-sensitive categories in retail: where you put the cold box determines the path every customer walks, endcaps do more of your promotional work than any sign, and the highest-value bottles need to be visible but not casually reachable. That points to three things: heavy-gauge gondola rather than light display shelving, shorter unsupported spans (a 3-foot shelf deflects far less than a 4-foot one under the same load), and the heaviest inventory — cases, large-format bottles, kegs — on the lowest shelves. Deflection is the signal to watch: a shelf that visibly bows is overloaded even if nothing has fallen.
Cold beer is what most customers came in for, so the walk-in cooler doors belong on the back wall. Everything a customer passes on the way there is incremental sale, which is why the aisle from door to cooler is the most valuable floor space you have. Keep it wide enough for two carts, keep the sightline to the cooler clear from the entrance, and put mixers, snacks, and promotional stacks along it rather than tucked in a side aisle.
The end of every gondola run is the most-seen shelf in the store, and it is the one most stores waste on overflow stock. Endcaps should carry seasonal promotions, new arrivals, and high-margin items you want to move — rotated often enough that regulars notice the change. One well-merchandised endcap facing the entrance outperforms most in-store signage.
Premium and allocated bottles do not belong on an open aisle shelf. The standard setup is a locking full-vision or wall case behind or beside the register: customers can see the bottle and read the label, but the transaction goes through a staff member. This also concentrates your highest-value inventory in the part of the store staff watch continuously. Checkout is where the small add-ons live too — mixers, airplane bottles, and accessories on a counter with impulse display space.
